Not gonna lie, I cheesed him my first time through by making him chase me onto that little rooftop, hitting him when he lands and running the lap again. But if you have a blunderbuss his parry window is relatively easy to hit and you can visceral spam him to death pretty quick too.
I've been doing it around a tree from the start. The parrying is actually difficult for me because I do not know when the timing is good!
