listen I get that I'm more lax than a lot of people about leftover longevity length, but are there really people out there throwing away their guiness beef stew on day 3???

I like making weird games, cooking, and assorted other funny little hobbies.
Feel free to ask me questions about any of those things!

If it still smells and tastes fine and on day 3 or 4 I'm still eating it
Probably depends to a large degree on your economic situationm historically. I'm mostly okay now, but there was a time where I very much wasn't, and as a result it feels very wrong to throw away food that's still edible.
In my home, food like that was being refrigerated for up to two days. If we wanted to keep it for longer, we did daily reheats - and counted fridge time since the last reheats, not since the first day.
