I am a fruit eater but cannot eat apples because they make my tummy upset :(
(for me it is Fuji. I especially appreciate their crisp texture and delicateness of flavor)
Honey crisp is a good one, but honestly it's hard to go wrong with anything that's not red delicious
Opal. There is something about that particular cultivar that is amazingly balanced for eating raw.
Pink Ladies are great if you like a little tartness with your sweet. (They're also called Cripps Pink btw, since Pink Lady is a brand name.)
Thren and I have gained an appreciation for Galas as well; they're almost as crisp as Fujis as long as they aren't too old, with a little more flavor, but they aren't tart at all.
I enjoy a Fuji Apple or a Pink Lady, not necessarily in that order.
Unless I am cooking with them but that's a whole other story.

I feel like a snobby hipster for saying that but I was subjected to farmer's markets during the window where those existed and it was unreal how good they were. They singlehandedly made me willing to take apples seriously as a fruit option instead of treating them as "well, I need SOME fruit/veg, and if the apple contains any flavor at all, they do have a longish shelf life...."
And then once they'd gotten famous they stopped breeding them for flavor and started breeding them for mass sale, which means selecting for thick skins and less bruising and all the other traits which appear by... reducing flavor. This is the evolutionary selection which destroyed Red Delicious apples btw– I have met people old enough to confirm that those used to live up to their name, decades ago. Which made them popular. Which made grocery stores go "omg we need LOTS of them! Make sure they all look good so people will buy them" and thus they taste like damp cardboard now.
