So a quick google to verify my memory says PS/2 supported unlimited N-Key Rollover, but this absolutely does not line up with my memories of needing to press like six keys at once in a videogame and hearing beeping come out of the speaker on my motherboard indicating I was firing off too many simultaneous keypresses.

That would probably be a cheap keyboard membrane where so many keys share a connection that pressing certain combination results in gibberish keycodes.

The PS/2 interface itself supports NKRO, so if you had a fancy keyboard it would just work. But with USB we emulate NKRO by making a microcontroller in the keyboard fake a USB hub with like 10 keyboards plugged into it.
