recipe time!
ingredients:
- ½ cup coconut milk ( 14g fat per ⅓ cup, coconut milk varies so much )
- enough water to dilute to 2 cups
- 4 whole eggs
- 2 tsp vanilla
- 2 tsp corn starch
- ¼ cup powdered erythritol
directions:
- put the coconut milk + water + milk on the stove
- whisk the eggs
- whisk the starch into the eggs
- i probably should have done whisk sweetener+eggs and then eggs into that combo but ha ha oops it went fine anyway
- when the coconut stuff starts to low boil temper the egg stuff ( i did this with an electric mixer with a whisk attachment in a pyrex measuring cup and just kept adding hot fluid until the pyrex was full 🤷♀️ )
- slowly pour the tempered egg into the hot coconut milk while whisking energetically
- stir constantly until "it looks about right" ( i have no idea how long it took it went way past "coating the back of a spoon" iunno )
- take off the heat and mix in the vanilla
- pour into a bowl
- YOU ARE DONE
