👏 It's 👏 pizza 👏 time!
This week was pan pizza! I've done this dough recipe a bunch, so I've gotten pretty consistent with it. It doesn't hurt that the recipe is much simpler than some others, and the steps are comparatively easy - you actually can do too much, since to get it light and airy you want to have a really light hand when mixing the ingredients and folding the dough, and not overwork it.
This particular pizza might be my wife's favorite that I make - Alfredo sauce, bacon, a whole lot of cheese. (I realized after we ate it that I forgot to top it with salt and oregano; salt in particular helps bring out the other flavors so I put it on all my pizza, but the salty bacon probably covered for that here.) Gotta love that crispy burnt cheese along the edge of the crust. I'm sure this exact pizza will be featured again in a month or so.
