it's not technically on itch anymore because of a DMCA takedown but this GBA block stacking puzzle game is probably my favorite free/pwyw itch game, it easily beats any official block stacking release on that console https://akouzoukos.com/apotris
Weird and Unfortunate Things are Happening is a really cool horror themed RPG.

It did get a steam release a little while back after having only been on itch for years. The only difference between the steam and itch versions, as far as I know, is that the steam one has achievements.
i am forgeting some, but i think abyssal somewhere is a good pick, i did played a bit today again after seeing on twitter
https://bad-pet.itch.io/devil-express and its sequel https://bad-pet.itch.io/devil-express-soulstice, they're super sweet!
I really adore “Stay?”, which is a work of hypertext IF set in a fantasy kingdom where (minor spoilers) you wind up trapped in a time loop and have to prevent the apocalypse.

I have a whole list of these but to pick just two, Awake by droqen is an extremely short game I still think about sometimes and DEADLINES by Auren Snyder is my all-time favourite 1v1 "fighting" game.
Mai-Chan's Sweet Buns. It's a challenging little PICO-8 puzzle game inspired by fictional cartridge art
