Depending on the type of pan, adding <1/4 cup (<60mL) of water while it's still hot and scraping with your spatula/tongs/spoon/etc. can help unstick most things as long they haven't yet burnt on. You can also use stock, vinegar, wine, etc.. You can then move the unstuck food around to absorb the flavorful "fond" this produces before the liquid completely boils off.

πŸ‘If you're just trying to clean a pan afterwards, low heat and water mixed with vinegar is fairly effective. You will have to periodically try to scrape (with a silicone coated thing) the burnt/stuck on food until it almost all releases. I usually cover the pan during this because hot vinegar has a strong smell.

Then you pour out the liquid and let the pan cool a little before using soap and a sponge/rag/brush to get the rest.
