a fast way of draining liquids is digging to the edge of the map and carving the edge walls into fortifications - liquids will flow right through it and disappear.
That's what I'm doing, on the level underneath this one. But I'm wondering if it's actually going to be possible to drain it or whether it's refilling itself from the rest of the map edges.
ohh okay! yeah it does refill itself from the edges. you'll have to seal it off, or perhaps channel it directly into one of those drains. (the latter has the advantage of an easy waterwheel setup)
