Made some Cheap Food that is filling and delicious and contains most of the general categories of food! its the only thing youll ever need to eat again
Can be adapted to fit pretty much any dietary needs except maybe a corn allergy, not sure what you could replace the polenta with, unforch. Recipe below!
Cheesy Chorizo Polenta with Veggies
Ingredients:
- 4 cups water
- 1 cup cornmeal/polenta mix (could proably use hominy if grits are your thing. i like polenta)
- onion (yellow because its the cheapest)
- tomato (i used grape tomatoes bc they were on sale)
- garlic (my massive jar of minced garlic was fine)
- oil of some sort (i used olive. it smelled italian)
- cheese of choice (this is a mexican blend, i dont remember what exactly it was)
- spinach (just a big handful of it)
- chorizo (I've also made this with soyrizo and a few different qualities of chorizo. yes its best with higher quality. but the low quality stuff is $1 and fine. soyrizo is also usually $1)
- Salt and Pepper and any spices if you want. sometimes i put thyme in it but i forgot
pan 1: boil 4 cups of water. remove from heat, salt, and add cornmeal. whisk and let sit.
pan 2: oil over medium high heat, add diced onion and tomato and garlic and just let it vibe until it feels right. the onions start to get a little clear and the garlic starts to brown and you're good. add in the chorizo (slice if its uhhh solid or remove from casing if not or whatever) and stir it until the chorizo is cooked. Yes its sometimes hard to tell, im not a chorizo expert despite eating a lot of it. just feel it out. try not to burn the garlic.
If one pan is big enough you can mix them together in that pan, i had to use a 3rd bowl. i put the polenta in, then spinach on top until it wilted a bit, then dumped in the pan 2 mixture and stirring. serve with cheese on bottom and on top. sometimes really good with sour cream too.
