Salmon trimmings fried with bok choy, shitake mushrooms, green onion, sesame, served over red rice
A grocery chain near me sells the trimmed scraps from their salmon filets for dirt cheap and so I've been experimenting with frying them up for crispy skin; it's interesting because the cuts also have a lot more fat than a normal cut so they get a very different texture at the cost of a lot more oil everywhere
ough i am filled with jealousy. the trimmed bits are easily some of my favorite parts, specifically bc of all the extra fat....
i wonder if any groceries near me might do this too
