meal prep monday
- black bean sofrito (onions, green bell peppers, roasted tomatoes with green chilies, cumin, chili powder, garlic powder, black beans, corn)
- lime rice (basmati with lime juice and olive oil)
- spicy guacamole (avocado, red onion, cayenne, diced jalapeno, tomatoes, lime juice)
- parboiled and sauteed potatoes (salt, pepper, smoked paprika, garlic powder, onion powder)
- tofutti sour cream
it took 3 hours but i'll be eating good this week, and it was way cheaper than moe's or chipotle
