i've been getting into making my own vegetable stock with leftover scraps. y'all heard of this? it's basically free soup

whenever i cut vegetables, i throw the scraps into a bag in my fridge. after a weekish, i usually have enough scraps for broth. fill a pot with water, dump the scraps in, chop up a potato and carrot, add em both wholesale. add salt and pepper, boil it for like an hour, and you've got Broth

strain it, store it in your fridge, and take it out anytime you want the world's easiest soup

being able to say "i'm going to make some soup" at any time is such a game changer. carrots, potatoes, onions, celery, whatever i've got -- i can and WILL make soup with it

All this - also if you eat cheese, DEFINITELY save the rinds from hard cheeses like parmesan in the stock stash, they add so much depth and character to the stock.

You can also freeze it in specific quantities - measure out a cup or whatever and put into a ziploc or other freezer-safe container. I used to use a two-cup mini loaf pan with four sections, like a little broth ice cube tray
