OK thinking about this more, a raw potato in a vacuum would probably turn into basically a rock, but a cooked potato might end up being more powdery. I'm pretty sure dehydrated cooked potato is what instant mashed potatos are made of, so I guess it might be fine?
Depending on how it gets transported and what your specific living conditions are, but it might be a bit more radioactive than your usual potato. Otherwise, the outer parts will be a bit dehydrated, but the core should be fine.
