I'd recently learned all the "bad" effects of MSG weren't scientifically backed and were actually mostly racist rumors repeated throughout the decades so decided to try cooking with it. The dish I'm cooking with the MSG is in the slow cooker right now. But I got curious and wanted to see what just like, a little bit of MSG on its own tasted like.
And...it's perhaps the oddest taste I've ever had on my tongue. Because it tastes like something. I know that it's the 5th flavor, umami/savory, but that doesn't tell me what it tastes like. I know the primary thing that makes savory taste that way is amino acids, but I really don't think it helps to say MSG tastes like amino acids. Inside the dish it enhances the flavor, so it makes the dish taste more like itself, and that's kinda what MSG tastes like - it's tastes like more. It tastes like a good aftertaste. It lingers on the tongue. What lingers on the tongue? Flavor. What flavor? Aftertaste. What kind of aftertaste? More. More what?
Exactly.
Anyway, based on how the sauce tastes after adding MSG I can definitely recommend it, and if you do get it try some on a spoon so you can understand what I mean by this because words aren't doing it.
