if a recipe says to sautee or fry something in extra virgin olive oil you should discount it and use vegetable oil or canola or something instead

  1. it is going to burn and make your food taste acrid, extra virgin is for tossing ravioli in or dressing a salad, it's not for frying.
  2. extra virgin olive oil is expensive you're just wasting money
