I will say eating a low residue diet for a week (due to lack of colon and active Crohn's, no I am not "on a diet" in that way, this is indefinite now) has given me a better appreciation for olive oil. I never understood before people talking about finishing dishes with a splash of olive oil but when I have nothing else to season with, I'm getting the olive oil notes and hits and enjoying it. Gonna have to buy some fancier kinds I guess to really spice things up flavor-wise.
