my intuition around this is maybe "hole" here is meant like how we say "hole-in-the-wall" about a restaurant, but i never annoyed an italian-american enough with it to confirm
(more clear is that Beppe is a nickname for Giuseppe, which gets localized to english as Joe)
got my first case of food poisoning from one of these joints as a kid. i have been Beppo's Enemy ever since
hole as in nook, small hangout, "hole in the wall", and Joe is Joseph is Giuseppe, which is usually shortened to Beppe, to be fair, but Beppo probably happens sometimes, maybe. Italy has a lot of linguistic diversity, I'm willing to suspend disbelief over one letter.
of course the people who founded this have no Italian cred whatsoever, so I'm using suspension of disbelief in the usual sense of enjoying a fictional work lol
The first time I said the words "Buca di Beppo" around my partner, they thought I was making it up as a fake Italian phrase and refused to believe it was a real restaurant
Beppo is an Italian short form of "Joseph". It's strange, yes, but I would argue no more unusual than the Richard -> Dick abbreviation. I know this because of reasons.
