According to mobygames it's her only videogames acting role. This FMV is honestly quite good for 1997; both the acting and production quality are decent, it's a reasonably good explanation of the basic rules, and you get to hear Ren Faire Kim Wexler say the words "creature" and "mana" more times than any mortal could dream of. The other guy does alright too; he was apparently in an episode of Star Trek: Enterprise, John Waters' Cry-Baby, and Ang Lee's Hulk (2003). They both seem like they're having fun with it.
On the actual game side, apparently Sid Meier had a significant role on this! His name was totally removed from the credits because he and some other MicroProse employees bounced to form Firaxis partway through development. All this info from Digital Antiquarian's recent writeup of the game.
