Sy Snootles was the first one I thought of, but it turns out Legends canon has a couple of others I'd forgotten about: one, an Arcona named Si Treemba in the Jedi Apprentice books, and two, Qu Rahn, the captured Jedi Master interrogated and killed by Jerec at the beginning of the Jedi Knight game.
I was an avid player of the Decipher Star Wars CCG and I know they supplied their own names for a lot of one-off characters, some of which made their way into other source material. So I was pretty sure they'd have one with fewer than three, but doesn't look like it.
