Here's a few more:

IASIP's The Nightman Cometh
Even Steven's Influenza: The Musical (might be bad)
Community's Season 2 Christmas Episode (not as musical as regional holiday music)

Steven Universe's "Mr. Greg"
The Fairly OddParents has "School's Out The Musical" (might be bad as well)

Batman: The Brave and the Bold has 'Mayhem of the Music Meister' where the villain of the week has magical singing hypnosis powers that make everyone else sing.

I know you specified 'generally non-musical' shows but I can't help but also suggest Phineas and Ferb's 'Rollercoaster: The Musical' - while every episode of P&F has at least one song, this episode was a remake of the pilot which didn't have any songs in it, explicitly in the format of a musical episode.

psychic combat in one episode of Legion is represented by the two characters singing "Behind Blue Eyes" at each other while having an animated wizard duel in the background. unfortunately there's no entire episode of the show that is all musical numbers but it has that, a rap battle, and a dance-off, all representing psychic conflicts.

I desperately wish more Prestige TV would do shit like this. what's the point of being Prestigious if you can't get weird with it? <--questions so few showrunners and studios dare to ask
