There's not a lot that I've seen, actually! There's some good Star Wars content here, which includes a map of Hutt Space, sector sheets, faction list, and a custom roll20 sheet, and here, which includes reskinned playbooks to give a move SW vibe. There are some cool ships someone made, a Dr. Who-inspired ship (??), and oh here's one more ship. Here are some NPC and random inspiration cards. Finally, the Operative is a really cool playbook that lets you be a former Hegemony agent.
I'm reasonably certain that this is every single fan-made S&V thing that's able to be found on the internet, though I am of course very happy to be proven wrong.
