Boulder-based chocolatier Chocolove has really impressed me thus far: Let's see if that trend continues! Today I have a 55% cocoa bar with tiny bits of freeze-dried raspberries mixed into it. Let's see how it tastes:
The chocolate of this bar is rich and a little buttery, with a smooth melt and a bit of a tannic finish. It's a pleasant balance of bitter and sweet with a strong, pure cocoa flavor and a tiny back note of coffee. The freeze-dried raspberries add random bursts of intense berry tartness that nicely complement the chocolate. They also have a super fun texture! I love how they sorta shatter and then melt in your mouth. On top of this, the raspberries' seeds are still intact. I know that some people don't like the texture of berry seeds, but I actually like the little bit of crunch that they add to this bar.
It's kinda funny, but most of the time I have less to say about chocolates that are really good! Safe to say, Chocolove has impressed me again. I really like this bar and I'll definitely be getting it again in the future!
