I am once again amused by the fact that you have to "rest" coffee, i.e., I have some coffee arriving today that I am ostensibly forbidden from brewing until it has sat for two weeks lol
I understand the mechanics of this, but it's just another reminder of the fact that fundamentally coffee wants to taste bad, making it taste good is always a struggle.
Tea is like, "oh yeah you can drink this tea as soon as you get it or in twenty or thirty years, should be fine"1
