one of my favourite cookbooks is the autumn and winter volume of greenfeast by nigel slater. Most of the recipes have 4 or 5 ingredients and everything I've made from the book has turned out well. Pretty approachable, pretty comforting, great if you want to eat vegetarian (but not vegan really, because most recipes rely on dairy in a way that's difficult to substitute.)
But I'm flipping through it now, and there's a recipe for what is clearly in methods, ingredients, the accompanying picture, and results, a risotto, but which the text refers to as "soup." It's in the soup section of the book. The first line of the recipe reads, "Make the soup." It then proceeds to give classic directions for a risotto, i.e. 'warm the olive oil.... add the rice. ladle in the stock, a little at a time, stiring almost constantly. Continue cooking until the stock has been absorbed and the rice is tender.. " The last step of the recipe is to "spoon the soup onto a plate" (???).
The more I think about this the more obsessed I become. Like what the hell is going on here? is this a typo and chapter error? Do the English consider risotto to be a type of soup? Nigel???
I'm including the picture, from the book, of what is clearly a risotto. Not sure what to make of this but it's going to haunt me.
