you could probably make this vegan/veg pretty easily if you used like, harissa or calabrian chili paste instead of nduja. and probably added significantly more fat to help it emulsify,* because while harissa has oil in it I would guess nduja's fattier.† I would go with like vegan butter over olive oil to get that saturated fat. that's not health advice.‡

*to get thicker sauces you often want to balance fats and water in a dish, because when emulsified they'll be thicker than either oil or water on its own

†Actually ok I checked the math, if you make this with 112g harissa or other spicy red pepper paste instead of 112g nduja, add like 12 extra grams of fat of some kind to match the nduja. like a tablespoon of butter / vegan butter basically. maybe a little extra salt too come to think of it, but go easy, do it to taste

‡i mean it's not not health advice, because the thinking on saturated fats has changed a bunch and frankly I can't remember whether saturated fat is still supposed to be bad for you.
