Phew. Been a busy few hours.
Did all the vegetable prep - washing, peeling, slicing, chopping.
Mixed up ‘fancy stuffing’ for the turkey, although really its just going to line the roasting dish and soak up all the juice - Leeks, fennel, pork sausage, shallots, sage, parsley, croutons and breadcrumbs.
Made green bean and mushroom casserole, with a crispy onion topping - the onions were oven baked instead of fried, and then layered on top with some cheese as well.
Also there is the roast radish+squash+pepper salad, dressed with fennel fronds, pepper, olive oil and balsamic vinegar.
Those are in the oven now, while I get the bird ready - and take 10 minutes to sit and rest and post this update :D
