Leviathan

Phew. Been a busy few hours.

Did all the vegetable prep - washing, peeling, slicing, chopping.

Mixed up ‘fancy stuffing’ for the turkey, although really its just going to line the roasting dish and soak up all the juice - Leeks, fennel, pork sausage, shallots, sage, parsley, croutons and breadcrumbs.

Made green bean and mushroom casserole, with a crispy onion topping - the onions were oven baked instead of fried, and then layered on top with some cheese as well.

Also there is the roast radish+squash+pepper salad, dressed with fennel fronds, pepper, olive oil and balsamic vinegar.

Those are in the oven now, while I get the bird ready - and take 10 minutes to sit and rest and post this update :D

It begins, like so many things, with coffee and maths.

Not a particularly happy time of year for me (thanks, emotional baggage) but all the same i wish you all a safe and lovely festive season with friends, family and loved ones.

Me? I’ll be in the kitchen, doing what I love.

Getting an early start on all the cooking I’ll be doing tomorrow… turkey is brineing, made croutons and breadcrumbs for the stuffing, and stewed up some marinara sauce.

Also made chilli dogs with some crusty rolls while I was at it. Cooking is hungry work.
