my mom wanted coconut cupcakes for her birthday tomorrow and by god That Is What She's Getting. a much more successful bake than the yellow cupcakes with chocolate buttercream i made a few weeks ago. this time i even remembered to take the butter out of the fridge the night before so i didn't annihilate my appliances trying to cream it! (RIP little $15 hand mixer from amazon, you will not be missed.)
recipe used was this one, recommended to me by my friend's aunt. since i'm only making these for two people i halved all the ingredients on the list and ended up with enough batter for 13 cupcakes and about an equivalent amount of cream cheese frosting (if you're generous with the dollops on each one). since there was less cake to be baked i put em in the oven at 350F for 20 minutes instead of 33, ended up being just the right amount of time :)
