x264, CRF 24, no changes to audio or subs.
why 24? because I initially did it as x265 before I realized that would probably give me playback problems, and then went to x264. and I forgot to change the factor I was using (my understanding being that x265 and x264 scale differently by design). but I saw it looked good, had reasonably small sizes (500-700MB per episode), and that 24 is in what ffmpeg docs call a (paraphrasing) subjectively reasonable range (17-28). so I said "okay sure" and started encoding season 1 (which I encoded differently and changed my mind on) again.
