they do, it's just hidden. on ios you shake ur phone and it brings up a popup with undo and redo options. on android it depends what keyboard app ur using, not all of them expose the feature but if you get https://play.google.com/store/apps/details?id=org.pocketworkstation.pckeyboard then Ctrl-Z and Ctrl-Y work. it's not very nice for general use tho, i just keep it around to work around annoyances like this.

that's true. have to turn on the accessibility option for this. it's not a bad idea but it's kind of annoying to use and easily triggered. i wish it was a button.
in iOS 13 it changed. do a three-finger swipe left, or three-finger double tap.
they moved the shake to into to accessibility, but the three finger gesture is on by default.

much better for general usage, although it doesn't have word suggestions or autocorrect unfortunately.
