Something like NiGHTS is way too fast for VR without making players nauseous, but Ecco might be a better fit. It has similar movement mechanics, but in a slower, puzzle-solving gameplay style. And first-person VR would be a great fit to sell the pseudo-horror feeling that the original games were always going for of being just a little dolphin up against forces beyond your comprehension. Something like the final boss of Ecco 1 when seen in first-person with spatial audio would be goddamn TERRIFYING. You could probably solve a lot of the UX problems of remembering where you are in an ocean area by having some kind of "clairvoyance" feature that pulls your view back out to a wide-view 3rd-person perspective before dropping you back into Ecco's view.
Damn, I kinda want to prototype this idea now
