Like say you are a farmer in a dungeon (goblin, slime, witch, something) trying to grow your dungeon crops (giant growing mushrooms etc) while possibly romancing the other dungeon-resident monsters, and one of the things you have to deal with is adventurers occasionally swinging through the dungeon cutting a swathe of destruction and killing your crattle¹ for XP

One thing that would be interesting about this is the setting would create an excuse for weird verticality and shape to the farm, IE you're having to grow on walls and cavecliffs within the dungeon

You can choose to raise Direcows, which produce high quality meat that sells for a high price but also attract adventurers like crazy, or you can choose to raise Cave Beetles which aren't as lucrative but which on the upside adventurers ignore because they don't look like fearsome encounters

Not really the same but this does remind me of the Badman/No Heroes Allowed series. The goal is explicitly to prepare a dungeon to defeat heroes and it's more of a puzzle than a farming sim, but it does require you to create a balanced ecosystem of monsters, letting some of them feed on each other to keep a balanced population and keeping others apart so they don't fight.

Yeah the "dungeon keeper" genre is a well established one with some fun stuff in it. The thing that made me think trying to rework it as a farming sim might be a specifically fruitful point in the phase space is (1) the "chill vibes" feeling the farming sims are stereotypically known for, which might contrast in a fun way with the nihilism of dungeon keepers (2) farming simulators aren't city simulators; in farming games you don't control the world, you only control one patch of it. Maybe (?) more room for interesting longform narrative if the bulk of the world [dungeon] map is "fixed" and only reacts to how you're running your own farm/affairs rather than being overwritten by them
