i think keeping it short but to the point is the strategy i've been employing when I remember to do it. i'm pretty bad about it and i wanna get better at alt-texting consistently.

personally for pictures i want to give a description of what can be seen, but not to an annoying degree, like keep it as concise as possible, which is good for most writing i feel

The most important part of alt-text is to include an extra joke in there, as a reward for clicking on the picture

one example I found really helpful was to imagine you were reading a post to someone while they were driving, and describing the relevant parts of the image to the driver who couldn’t see it
