i've never baked with buckwheat before, but i can give some advice on pizza dough, all the recipes that i'm seeing upon searching for buckwheat recommend a miniscule amount of sugar. To get anything that tastes like pizza crust you'll need a flour to sugar ratio of just under 6:1 by weight, i use 95g of sugar to 585g flour, not including the flour used for kneading
