it's particularly impressive how many of these crops were essentially bioengineered from much less impressive wild plants by various different groups of Native Americans. it would be an interesting avenue of speculative fiction to imagine what a similar level of biological acumen could have done with Old World flora instead

"Is this a new world or old world food?" was one my 4 person covid apartment's go to conversations. Tons of mileage out of that one. Constantly in awe at how every European country's food culture was changed.

every now and then i try to conceive of what italian cooking must've been like before the introduction of the tomato and i just can't imagine it. i know there are italian dishes that don't use tomatoes, but it's so core to so many different dishes that are common today
