Pour canola oil into a medium-sized, tall-sided pan until the bottom is just covered. put three popcorn kernels in, and heat over medium-low heat until they pop—this should take just long enough that you start thinking "why haven't they popped yet?" Once they pop, take the pot off the heat, add one third cup of unpopped kernels, and shake the pot to coat them with hot oil. Then salt the pot (more than you think you'll need) and shake it again to evenly distribute the salt across the unpopped corn. Count to thirty, then put the pot back on the heat with the lid cracked. The popcorn will begin to pop quickly and all at once. Once it's finished popping, pour two thirds of the popcorn into a bowl, then continue shaking the last third to get it nicely browned, then add it to the bowl.
Variant: use less salt initially, then use a mister to spray tamari over the top and lightly dust with nutritional yeast. Mix and repeat to taste.
