making potatoe kugel tonight :^)
really happy with how its turning out. I tried putting the potates in ice water while pealing and shredding them and they looked a lot better when I got them in the oven than they usually do. really grateful to have the day off and getting to make something that's usually too labor intensive for me to cook (no time on weekdays, no energy on sunday)
used a ton of onion and garlic and pepper and oil and the house smells sooooo good rn omggg
this turned out so good omggg, first time I've made it in years im realizing.
also while it cooked I remembered that I got that "put everything in ice water until you're ready to mix it with eggs" trick from an old friend rhi like three years ago. so, shout out to her. it worked really well, glad I finally got around to trying that trick out
also also, I think I've just gotten a lot better at cooking since I last made this? it took like half the time and a quarter of the effort as I remember. idk it's neat having such a moment of seeing my progress at this skill. so much of cooking is time and resource management and I hadn't learned that until moving in with Dee and spending two years cooking for two most nights. def gonna be making it more often now that I know its not as tough as I was remembering
