as someone who is now 9 years into a career as a cook that i fell backwards into itβs insane how basically every recipe is
a) make the recipe
b) if itβs not good you either butter or salt it until it is
c) sometimes citrus helps too
someone should write a book about how salt, fat, acid, and heat are all important. hope that happens soon
