i think what i enjoy abt cooking is just....knowing ill end up with something yummy + knowing i have the ability to make something really delicious. im a bitch that loves ordering out sometimes as well but equally enjoys having a firmer autonomy on my nutrition, and i think its important to nurture that intimacy with your meals
its fun to craft a gay little concoction. its fun to create. and you dont have to be perfect. you can (mostly) eat your mistakes and anything you dont like can be omitted or you can put something else in it. cooking is art and science and delicious and fun

literally so much of my thought process is "i want stew" or "i want mall food" or whatever and twisting whatever happens around that anchor of thought. occasionally sure ill follow a recipe (especially with baking something or certain parts of stews or sauces that require sauteeing onions and pastes to increase body of flavor) but i try to let myself be as free-form as i can as well
recipes are important but being able to take a free form approach is also important....it depends on what im making i guess. if i know most of what i want is Chicken And Rice/Noodle i can work more freely vs something where its more important to tend to temperatures and specific ingredients. i used to be stubbornly avoidant of sugar in tomato sauce before i truly realized its ability to cut acid when i had a sauce that would not go down the way i needed it to. i had to write my apology to the meemaws of the world
but!!! yeah. rambling but i loooove food i love cooking i love sharing and i love eating
