onion sandwiches are surprisingly amazing. our partner Kaylin asked us a while back to make them for her (based on a Jacques Pepin video, though we didn't follow it exactly) and holy heck are they remarkably satisfying. ~Chara

Looked up that recipe and, holy heck, RAW ONION? I'm sure the texture is great but we can't handle raw onion on a regular sandwich, with other ingredenience to tame make it manageable. It looks really nice though, like the kind of cute tiny sandwiches you would have with tea and theyre served on a little multi-tiered thingy.
I guess Kaylin and I both love raw onion =p can you manage a "sweet" onion by any chance?
We can do something like pico de gallo, where the onion is a little broken down by acid from tomato or lime or whatever. We HAVE tried various onions and it just is not great lol
We DID make onion jam, though, which is very good. But that's cooked, for multiple reasons.
aww. I mean, I love onions so I guess I must just have the tastebuds for it or whatever, like how some people can eat cilantro and other people can't...hm, how are you with shallots? have you tried those?
I don't think I've ever encountered a situation eating a raw shallot lol
