It's a mouth-full, but I've been dumping a ton of hours into Astrea: Six-Sided Oracles. It's Yet Another Dicebuilder Roguelike, but I am really digging the way that it has made the health bar more interesting than "you lose if your health bar goes to zero; you win if all enemy health bars go to zero".
