Look I know DnD Beyond and other programs are slick, but have you considered: Stickers.
My current game resolved to leave DnD Beyond back when it seemed WotC was about to do us all really dirty and honestly, it's been for the better anyway. Moving back to paper has allowed back in a level of personalizing you can't get with digital programs (especially ones that demand you to buy every tiny addition of info to complete your sheet).
Our party took a trip to the local Michaels and picked up a bunch of stickers, washi tape, colored paper etc to really bedazzle our character sheets with. Since my boy is a cleric to Elestraee, I got all celestial themed ones. ✨
For the character sheets, we keep them in plastic sleeves to then use wet erase markers on to make notes (health, etc). And to help me keep the enthusiasm to take notes (I'm a terrible note taker) I'm using stickers to highlight different session notes.

I think this brings in the perfect level of camp in to our game and my notes. My vampire is a bit of a sentimental guy so I could 100000% see him actually srap booking (he already keeps a journal).
Anyway, I just wanted to share this little aspect of how I play as it's honestly made taking notes more fun for me and does over all help readability! Also it's just low stakes fun, and we all need that sometimes.
