The secret to enjoying cooking is to spend time prepping food beforehand so you don't need to panic when you need something mid recipe and cleaning as you go so there's nothing looming over you to clean afterwards. That's it. Read the entire recipe and break it up into parts.
"But I'm bad at planning!" Okay but you can see that you need a potato cubed and cut that up first before you turn on any burner.
"But I can't clean things while I cook!" Okay but you have time while water is boiling. Soap and rinse your cutting board to dry.
The things you need to do to be successful are all small tasks, not big ones. Cooking can be orderly! The main other thing I want to point out is that cooking times are a lie because they never take into account prep time. Don't feel bad if you are slower than the listed time.
I always empty the dishwasher (or finish loading it so I have a clean sink) before I start cooking! If I'm using a recipe, I go through it and see what the End Use for each ingredient is, and what prep they need, so I can do all the prep up front (well-written recipes will do this for you).
