So what we're doing here, thanks to some tech discovered from 1815 by the folks in Chelsea Physic Garden, is called "forcing rhubarb." So first I'm letting them grow out in the open, and that's going to allow them to store calories in the roots. Next, I'm setting up the crowns here like this by exposing them to frost. And then you can see over here we've got a shed that keeps them in the dark and that'll make it so they're starved for light which keeps them from growing green and fibrous. This shed is kept at room temperature so that they keep growing despite having no light. You can probably read a few donations while I'm setting this part up.

Ok so now that we have that done, you can see the rhubarb is maturing under basically total darkness and really close together, and that's gonna be important for this next part: if you listen closely you can actually hear the rhubarb popping out of its buds and growing up to an inch a day.
