I don't have a steamdeck (yet) so take this with a grain of salt, but from what I understand it is basically a mini computer running a custom build of Linux on it. So you can install pretty much any kind of software on it that you want, provided it can run on Linux. I believe it's also possible to wipe the drive and install Windows on it instead if you prefer. (Though I've heard proton is pretty good at getting most things to run on SteamOS)

you can install any ol' Linux on it and then install the itch client, or you can just kick the Steam Deck into desktop mode and install itch there. pragmatically speaking you'd probably want the latter, since Valve has fixes for drivers etc. in their own Linux distro that aren't necessarily picked up in others for a while, plus Steam has the input configurator.
thing is, the itch client isn't particularly TV-friendly on its own, but it's doable if you map controller to mouse or what have you
