I’ve got a couple of confused thoughts on this.
First I agree with you, I don’t like their continuing approach to boss design. It seems quite immature to me - just make every boss twitchy as fuck to beat. SMT bosses (another series where the fans are obsessed with difficulty) are mostly puzzles where you have to design your party to beat them. That series has got better because Altus have designed better ways for players to access and apply the information they need to meet the challenge of these boss fights. Better UI, more information available in game, more choice when fusing, etc.
Personally, it’s not even FROM’s boss design which I don’t enjoy as much. DS had a sense of whimsy and strangeness which could at times be muted and hidden. It felt mysterious. A world an adventurer would want to explore and uncover. Dangerous, of course, but also wondrous. The sense of bombast was there but it felt in keeping with that silly, Wagnerian side of western fantasy. It felt Romantic. To me Elden Ring, with its deep, grotesque body horror doesn’t really do that for me. It all looks much too hopeless. It all looks just totally fucked - like where’s the fantasy?
Anyway that’s just me, which brings me to: Thirdly, I’m definitely in the minority. People love Elden Ring! People love shadow of the eerd tree right? I think I’m just not From’s audience anymore. They’ve moved on, I’ve stayed the same lol
