I feel like i am misleading bc the only ones i've watched fully (or almost fully) have been with my friend who showed me word of honor and the untamed, (and i believe those fall under a different category iirc? Also for the life of me I can't remember if I actually finished the untamed because of how long it was but I know I finished MDZS novel for sure.) and some with my uncle when he was recovering at our house after his surgery.
For some reason he was watching every single wuxia show he could find that had spanish subs and I sometimes sat with him to watch or watched some episodes while I prepped dinner (idk why but my mom, aunts, and uncles got obsessed with CN and KR shows??? I think it was bc of the pandemic but it was kind of funny)
I want to watch more but I want to ask my friend for more reccs (or for us to start some of the ones she had wanted to watch with me)

I don't think that's misleading, you have to start somewhere! And besides, when you're talking about getting into things I don't really think there's a huge difference in xianxia vs classic wuxia, like it does matter but it all depends on the story. Same way there are different nuances to genres like action or historical fantasy, but those are still good starting points when you are looking for more stories!
I started watching wuxia bc my family would binge these shows when I was growing up (back when we had to wait for them to get dubbed into Vietnamese on multiple VHSes lol), so your family watching makes sense too, binge nature is a lot of what makes these shows so popular!
I haven't had the time/energy to watch a lot of recent ones but I liked Maiden Holmes and also The Imperial Coroner, though I don't remember if I finished that one. I started Nirvana in Fire bc another friend started watching it, but I unfortunately don't find it very good /:
