There are going to be ways to disable it in the Group Policy settings, because these are the sorts of things businesses want/need to disable en masse. There'll be a guide for disabling this sort of thing once it hits wider release.
Meanwhile, we're going to downgrade to Win10 today.
welp better look out for that and tell my editors to maybe possibly eventually get us to opt out of slack's ai too 
I don't really know for sure but I bet there will be some kind of group policy or registry key to adjust to turn it off, I have copilot fully disabled with a registry thing right now although I'm not sure that's a smart way to do it...

I ended up running terminal as admin and inputting this command:
reg add HKCU\Software\Policies\Microsoft\Windows\WindowsCopilot /v TurnOffWindowsCopilot /t REG_DWORD /d 1 /f
Ok yea I think that's equivalent to what I did, I just did it through the GUI regedit application bc am baby afraid of terminal
the correct way to avoid this is, as always, wiping your current install and replacing it with Windows 10 LTSC IoT, which comes without most of the bloatware, doesn't get feature updates as often, and makes it easier to spot the crap that does make it through
