Gas stoves are really bad for your health. They leak a lot of shit into your indoor air that actually causes damage to your brain and body. Studies found that chefs working in restaurants with gas stoves suffered a lot of health issues form it. They're bad for the environment too. And the worst part is that they're actually worse at being stoves than modern electric stoves and induction heaters. The only thing they really do better than modern electric stoves is if you're stir-frying in a wok at a high heat but guess what, your indoor gas stove on top of your oven? It definitely can't actually reach the temperature you need for that. You'd need a special burner like they use on cooking shows for that; and because of the smoke and high heat, you'd be best to do that outdoors for many health and safety reasons not just indoor air quality.
Modern electric stoves are better at heat control, have a wider range of temperature especially at low temperatures, are better for the environment, and heat more consistently too. They're also easier to clean and more cost efficient. They don't change temperature as instantly as gas but if that's something you really need (which you probably don't need as much as you think you do) you can use an induction stove which only works with certain metals and only while in contact; but is so fuckin' safe you can put your hand on it and not be burned, but the metal will heat instantly.
